TOASTED COCONUT & PB ENERGY BALLS

Makes about 12 balls

  • 1 cup old fashioned oats

  • 1/3 cup unsweetened toasted coconut flakes (plus more for topping)

  • 1/3 to 2/3 cups peanut butter (depending on the consistency you want)

  • 2 tablespoons 100% maple syrup

  • 2 tablespoons chia seeds

Instructions:

  1. Set some additional coconut flakes on a plate and set aside. 

  2. Mix all of the ingredients (except for cacao nibs) together using a food processor or blender (you can also mix them with your hands in a large bowl).

  3. Scoop a small amount of oat mixture (with a small spoon or a small cookie scoop) and roll into a ball. Roll the ball over the additional coconut flakes for additional texture.

  4. Store in an airtight container  - enjoy!

Nutritional info: Each ball has approximately 100 cals, 3g Protein, 6g Fat, 10g Carbs.
