TOASTED COCONUT & PB ENERGY BALLS
Makes about 12 balls
1 cup old fashioned oats
1/3 cup unsweetened toasted coconut flakes (plus more for topping)
1/3 to 2/3 cups peanut butter (depending on the consistency you want)
2 tablespoons 100% maple syrup
2 tablespoons chia seeds
Instructions:
Set some additional coconut flakes on a plate and set aside.
Mix all of the ingredients (except for cacao nibs) together using a food processor or blender (you can also mix them with your hands in a large bowl).
Scoop a small amount of oat mixture (with a small spoon or a small cookie scoop) and roll into a ball. Roll the ball over the additional coconut flakes for additional texture.
Store in an airtight container - enjoy!
