EASY VEGGIE STIR FRY

INGREDIENTS:

  • 2 tbsp avocado oil, or coconut oil

  • tbsp minced garlic 

  • 1 cup chopped asparagus or green beans

  • 1 cup mushrooms (your choice)

  • 1/4 cup carrots, shredded

  • 1 small head broccoli, chopped

  • 1 red bell pepper, chopped

  • 2 green onions, thinly sliced

  • 1 handful of spinach or two baby bok choys

  • 1 tbsp fresh ginger, grated

  • 1-2 tbsp coconut aminos 

  • 3 tbsp hemp seeds 

  • Salt and pepper to taste

    For additional protein:

  • 4 oz protein of your choice or

  • Edamame or

  • 3 eggs

INSTRUCTIONS:

  1. Steam broccoli, then set aside.

  2. Heat oil in a large pan, add garlic and sauté for 1-2 minutes

  3. Add carrots, asparagus, broccoli and bell pepper. Sauté for a few minutes (about 3)

  4. Add bok choy/spinach, green onion, and ginger, and stir-fry until greens have wilted. 

  5. Optional- mix in 3 scrambled eggs and cook until eggs are fully cooked through. Or top with your choice of protein.

  6. Stir in coconut aminos, remove from heat. Stir in hemp seeds and serve!

Serve with any grain you like (white rice, quinoa, etc) or cauliflower rice, for a low carb option.
