MUFFIN TIN FRITTATAS

Makes 12 mini frittatas

INGREDIENTS

 
  • 6-8 eggs

  • Splash nut milk

  • Olive oil or molten coconut oil (for the tin)

  • Salt, pepper & spices to taste (I like using oregano and turmeric)

  • 3 veggies of your choice, finely chopped (for example: spinach, mushrooms and bell peppers - get creative, choose veggies you enjoy)

INSTRUCTIONS

  1. Preheat oven to 350F and grease a 12 muffin tin with oil

  2. Add oil to a pan and sauté the vegetables lightly, set aside

  3. In a medium bowl, whisk the eggs and add the sautéed vegetables. Add seasonings.

  4. Add eggs to the tin (leave about 1/4” from the top)

  5. Bake for 20 minutes (or until a toothpick comes out clean from the frittatas)

  6. Remove from oven (use a a knife to go around the edges). Let it cool and refrigerate in an airtight container

To serve:
Enjoy cold or microwave for 30-45 seconds and top with arugula!
