OVEN ROASTED TUBERS
Makes about 4 servings
INGREDIENTS
1 medium sweet potato
3 purple carrots
2 large golden beets
2 parsnips
2 radishes
Olive oil or avocado oil
Salt, pepper, and oregano (to taste)
1/4 cup Vegetable or chicken broth (low sodium)
INSTRUCTIONS
1. Preheat oven to 425F.
2. Chop all of the vegetables into medium-sized cubes (don’t make them too small) and toss in a bowl with the oil and spices.
3. Place on an oven proof dish (a baking sheet works well) and cover with foil.
4. Roast for 35-45 minutes, mixing halfway through.
5. Let cool and store in an airtight container.
Ideas to enjoy these veggies throughout the week:
Add greens, hemp seeds & tahini dressing for a salad
Add bread, hummus and use these veggies as topping for a sandwich
Add to quinoa and tofu for a bowl
Pair with your favorite protein and enjoy as a side
