PUMPKIN MUFFINS (VEGAN AND GF)

makes 12 muffins

WET INGREDIENTS

  • 1 cup 100% pure pumpkin puree

  • 1/4 cup melted coconut oil

  • 1/4 cup + 2 tbsps coconut sugar

  • 1/4 cup + 2 tbsps maple syrup

  • 1 flax egg (1 tbsp ground flax + 3 tbsp warm water)

  • 1 teaspoon pure vanilla extract

DRY INGREDIENTS

  • 2 cups GF oat flour

  • 1/2 cup almond meal

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 2 teaspoons of pumpkin spice mix (or cinnamon, cloves and nutmeg)

  • Pinch of salt

INSTRUCTIONS

  1. Preheat oven to 350F, line or grease a 12 muffin pan and set aside

  2. Combine the wet ingredients in a large bowl (whisk until well incorporated)

  3. Add the dry ingredients to the wet ingredients and whisk, batter will be thick

  4. Scoop batter into muffin pan and bak for 20-25 minutes 

  5. Remove from oven and let them cool before enjoying!
