PUMPKIN MUFFINS (VEGAN AND GF)
makes 12 muffins
WET INGREDIENTS
1 cup 100% pure pumpkin puree
1/4 cup melted coconut oil
1/4 cup + 2 tbsps coconut sugar
1/4 cup + 2 tbsps maple syrup
1 flax egg (1 tbsp ground flax + 3 tbsp warm water)
1 teaspoon pure vanilla extract
DRY INGREDIENTS
2 cups GF oat flour
1/2 cup almond meal
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons of pumpkin spice mix (or cinnamon, cloves and nutmeg)
Pinch of salt
INSTRUCTIONS
Preheat oven to 350F, line or grease a 12 muffin pan and set aside
Combine the wet ingredients in a large bowl (whisk until well incorporated)
Add the dry ingredients to the wet ingredients and whisk, batter will be thick
Scoop batter into muffin pan and bak for 20-25 minutes
Remove from oven and let them cool before enjoying!
